Follow this easy recipe to make the ultimate Christmas treat!
- 4 eggs
- 2 egg yolks
- 100g Caster sugar
- 80g Self-raising flour
- 50g Cocoa powder
- Lemon Zest
- 400g Chocolate
- 250g Butter
- 250ml Whipped Cream
- Beat the eggs with sugar and lemon zest. Next add flour and cocoa powder into the bowl and fold together using spatula. Be careful not to beat any air out of the mixture.
- Pour the mixture onto a greased baking tray and spread to 1cm thick . Bake for about 10-12 minutes at 180ºC or until firm to touch. Remove and allow to cool.
- For the filling, melt the chocolate with butter and sugar over a bain marie. Next add whipped cream and whisk. Allow to cool.
- Lightly soak the sponge in brandy, then spread the filling evenly onto it. Roll the sponge to form a cylinder shape and use any left-over chocolate to decorate. Chill before serving.
