Materials
- 225g plain flour
- 150g golden caster sugar
- 125g Softened butter
- 3 medium eggs
- 1tsp baking powder
- 1tsp Vanilla extract
- food colouring edible
- For the Icing
- 1tsp Vanilla extract
- 750g cream cheese
- 350g Icing sugar
Instructions
- Preheat oven to 180ºC. Grease 2 large round sandwich tins and line them with baking parchment.
- Put the butter, flour, caster sugar, vanilla, baking powder and eggs into a large mixing bowl and mix well. Beating with an electric whisk will create a smoother mixture.
- Weigh the mixture and place exactly half into another bowl. Take 2 food colourings and stir a small amount into each of the mixtures. Adding little by little until you have the desired colour.
- Pour each batter into the lined tins, trying not to waste any of the batch.
- Bake on the same shelf for 11-12 minutes or until skewer comes out clean. Once baked place sponges onto cooling rack and allow to cool.
- Wash the tins and repeat steps 2 more times using the other 4 colours.
- Icing: Beat the vanilla and cream cheese with an electric whisk until smooth. Sift in the icing sugar and fold in with spatula. Try not to overwork the mixture.
- Spear a thin layer of icing onto your cake stand or plate in the shape of your sponge to act a cement.
- Place the red sponge onto the icing then spread some more icing onto the top of the sponge and cover evenly to the edge. Repeat this step for every layer. Remember: In order of the colours of the rainbow!
- Once assembled, spread the icing in a thick layer over the entire cake and serve!
