Materials
- 100g Icing sugar
- 100g Ground almonds
- 2 Medium egg whites
- Salt small pinch
- 55g Caster sugar
- 150g Unsalted butter softened
- 75g Icing sugar
- food colouring
- baking paper
- 1 piping bag
- food flavouring
Instructions
- Preheat oven to 160ºC
- Sieve the icing sugar into a large mixing bowl and mix in ground almonds.
- Whisk egg whites and salt into a separate bowl until they form soft peaks. Whilst whisking, add in the caster sugar bit by bit until the peaks are stiff and glossy.
- Gently stir in the icing sugar, food colouring (sparingly) and almond mix, trying to lose as little air as you can.
- Draw circles of about 10cm diameter onto the baking paper to use as templates for your macarons.
Place the mixture into a piping bag and pipe mixture onto the template circles. Remember you will need twice as many circles as the desired number of macarons.- Leave the mixture to set for 20 minutes. The surface of the macaron should become smooth and shiny. You can put them into the fridge to speed up the process.
- Bake the macaron for 7 minutes, open door to release steam and then bake for a further 7 minutes. The macarons should look risen and feel firm to touch. Place macarons on cooling rack to cool.
- For the filling, beat the softened butter, gradually adding the 75g of icing sugar and colouring/flavouring you may choose.
Place about 1/2 tsp to the flat side of the macaron and sandwhich together, twisting slightly to bond.- Refrigerating the macarons for 24 hours will make them extra tasty and chewy.
